Crispy Chicken Fingers

Who woulda thought!? Healthy chicken fingers that don't taste like cardboard and that are actually crispy!! The great thing about this recipe is that it's so low-cal and low fat that its easy to make some variations and still keep it pretty healthy. And yes, healthy enough to throw a 90 calorie bag of chips in with it!!

Ingredients
1 lb boneless chicken tenders (its so worth the time it saves to buy chicken that's already sliced up for you)
3 Egg Whites
2 Cups Panko Bread Comes (this is key)
Salt and Pepper

Sauce
2 Tbsp Dijon Mustard
1tsp chipotle pepper pure (chipotle based hot sauce is the same thing)
1 Tbsp honey

Preheat oven to 450 and  grease pan. Before you start its nice to treat this recipe like we do in the automotive industry....with an assembly line. In order place the chicken on a plate, put the egg whites in a bowl next and then spread the bread crumbs out on a plate. When spreading out the bread crumbs I find it easy to not put them all on the plate at once time, the extra egg will start to clump the bread crumbs around it with your greased pan at the end. After your assembly line is set up salt and pepper the chicken strips. Then, individually dip one strip into the egg white, shake off the excess egg and then cover in bread crumbs. After all of your strips are coated, bake for 10-12 minutes on one side then another 2-4 on the other.
Meanwhile, mix the Dijon Mustard, hot sauce, and honey together in a bowl. Once the strips are done you can toss them in the sauce.

All in all this meal makes 4 servings at 250 calories and 1.5g of fat per serving!!

Now, I don't like mustard so I figured I'd try the sauce to see if I might like it before I dumped it all of the strips. And not to my surprise. I didn't. Nor did Brock, who likes mustard but apparently not Dijon mustard.  But like I stated above this is so naturally low fat (and mind you those stats are assuming you do use the sauce) that you can add your own low fat sauce. Just make sure it's low fat and healthy, unless you want to indulge then throw on em whatever you want!! I personally just had some Frank's red hot and Brock had some barbecue sauce.

After I made this I INSTANTLY thought of some modifications. To keep it light and sauce free you could add any sort of seasoning to the bread crumbs. Instead of adding the flavor last you could just add it towards the beginning and bake it in!!
